Overnight Chia Pudding
Overnight Chia Breakfast Pudding
Ingredients:
1/2 cup chia seeds
3 T. flax seeds
13.5 oz can organic coconut milk (full fat)
2 cups water
¼ C. Vital Proteins Collagen Powder
Pinch himalayan salt
3 t. Cinnamon
1 t. Vanilla extract
3 T. Chopped walnuts
½ C. organic, unsweetened coconut chips
1 C. raspberries
3 T. 100% cacao chocolate chips
- In a blender: coconut milk, water, collagen, salt, cinnamon and vanilla. Blend until ingredients are incorporated.
- Pour coconut milk mixture into large bowl and add chia and flax seeds. Whisk until milk is soaked into all the seeds and generally not sticking together.
- Allow to sit until fully thickened (10-15 minutes).
- Pour seed/milk mixture into three to five, pint, wide-mouthed jars.
- Add toppings and lid the jars.
- These will keep in the refrigerator for 4-5 days.
